I CANNOT GET ENOUGH SHISHITO PEPPERS! If I see them on a menu, I have to order them; if I see them at a grocery store, I have to buy them. They can be difficult to find if they are out of season (summer is their season), but some stores will still carry them for most of the year. Shishito peppers are a Japanese pepper with a very addictive mild, crunchy and somewhat sweet taste. This appetizer is such a crowd pleaser (so buy extra) and so simple to prepare. The dipping sauce can be made ahead of time but the peppers are best served immediately when they are still warm. They are perfect with just olive oil and sea salt but this dipping sauce just kicks it up a notch.
Ingredients:
- 2-4 oz (a handful or two) shishito peppers
- 1 tsp sea salt + ½ tsp for sauce
- olive oil
- 2 tbsp goat cheese
- ¾ tsp sriracha sauce (add more or less if you prefer)
- juice of 1 lime
Preparation:
Mix goat cheese, sriracha, lime juice and ½ teaspoon of salt together. Set aside.
Cover the bottom of a sauté pan with oil and heat on medium-high heat (can also be done on a grill). When the pan is hot add the peppers. When each side is perfectly blistered (only takes about 2-3 minutes), remove from heat, sprinkle with coarse sea salt and serve immediately with the spicy goat cheese dipping sauce.
