In honour of the long overdue marriage equality act in the USA, I give you, Rainbow Burrata. Coming from a world filled with performers, I have many friends who have been waiting for marriage to become equal in the US and I couldn’t be happier that it finally has. I decided to make something special to show my love. My all-time favourite cheese in the entire world is burrata, which is a hard outer mozzarella shell filled with a delectable, creamy mozzarella inside. My mouth is watering just thinking about it! To give it that rainbow flare, I added some of the brightest and tastiest fruit and vegetables I could find that wouldn’t hinder the heavenly flavour integrity of the burrata. With all of the different ingredients, each bite is going to take your taste buds on a unique, cheesy and magical adventure. Add or subtract any ingredients that you like to make it your own rainbow of delicious love.
Here’s what I used, followed by other fun suggestions:
Ingredients:
- 1 Burrata ball
- RED – radish (another option: tomatoes)
- ORANGE – orange zest (another option: squash blossom, apricot)
- YELLOW – lemon zest, raw and thinly sliced yellow beets
- GREEN – arugula, fennel fronds (another option: watercress, alfalfa sprouts)
- BLUE – blueberries
- PURPLE – raw and thinly sliced purple beets, Turkish figs
- edible flowers to make it even brighter (optional)
- black lava salt (or regular sea salt)
- olive oil
Preparation:
Pile the greens underneath the burrata to give it an anchor and then basically just add the fruit and veggies around the plate to your liking. Add a drizzle of olive oil, a sprinkle of sea salt and you’re all set to enjoy this mouth-watering, fresh and creamy dish. Serve with a piece of fresh Italian bread, if desired.
